No fancy shaping. No bakery gymnastics. No need to own a sourdough starter. Just mix, let the dough rise, pat it onto a tray, rise once more, sprinkle with oats, bake until golden, and prepare for that glorious “fresh bread just happened here” moment.

Oat-a-licious Tray Bake

What you’ll need:
• 5 dl oat milk
• 25 g fresh yeast
• 2 tbsp honey or syrup
• 1 tsp salt
• 1,5-2 dl oat flakes
• 7–8 dl wheat flour
• 0,5 dl rapeseed oil or melted butter

For the final oat-powered flourish:
• Oat flakes for topping

How to make the magic happen:
Warm the oat milk until lukewarm and dissolve the yeast into it. Add honey or syrup, salt, oat flakes, wheat flour, and rapeseed oil. Mix into a soft dough and let it rise until doubled in size — this is where the patience pays off.

Pat the dough directly onto a baking tray lined with baking paper. Sprinkle oat flakes on top, cut the dough into ready-to-share pieces and let rise once more before baking, and bake at 210-225 °C until beautifully golden brown.

And there you have it: soft, rustic, golden oat goodness with very little fuss and a fairly high risk of disappearing before it has properly cooled.

Have you ever thought, that tucked inside that modest bowl of porridge is a nutritional overachiever: fibre. More specifically, oats are rich in beta-glucan, a soluble fibre with a résumé so impressive it would take pages to go through all its’ achievements. 

To appreciate oat fibre properly, it helps to meet the oat kernel itself. Under the outer hull sits the groat, made up of three main parts: the bran, the endosperm, and the germ. The endosperm is mostly starch, the germ contains valuable fats and micronutrients, and the bran is where much of the fibre lives.
